5 nos Brinjal (chopped)3 nos Red chillies (broken into two)2 springs Curry leaves1 tsp Mustard seeds2 tsp Coconut oil3/4 cup YogurtSalt (As reqd) For preparing binjal in yogurt, cook the brinjal with required amount of water and salt. Drain the water well.Mix the brinjal with yogurt .Heat coconut oil in a pan and splutter mustard seeds. Then add red chillies and curry leaves. Pour it into the yogurt mixed with brinjal and mix well.Brinjal/vazhuthananga in yogurt is ready. Serve with plain rice. Kerala
