Instructions
For preparing courgettes au-gratin, wash, dry and slice the courgettes.
Fry the onion, shallots and mushrooms in butter for 5 minutes. Keep it aside.
Blanch the courgettes in salted boiling water for 5 minutes and drain thoroughly.
Light the oven grill.
Mix in the fried mushrooms onions mixture and courgettes. Arrange them in a baking dish.
Whisk cream, salt, egg yolks, pepper powder and curry powder.
Pour this over the vegetables and cook under grill for 7 minutes.
Courgettes au-gratin is ready. Serve hot.
