  • 750 g Courgettes/zucchini
  • 200 g Button mushrooms sliced
  • 2 nos Shallots sliced, Kunjulli
  • 1 no Onion sliced
  • 180 g Fresh cream
  • 3 nos Egg yolks
  • Curry powder A pinch
  • 20 g Butter
  • Pepper powder As reqd
  • Salt As reqd


  • For preparing courgettes au-gratin, wash, dry and slice the courgettes.
  • Fry the onion, shallots and mushrooms in butter for 5 minutes. Keep it aside.
  • Blanch the courgettes in salted boiling water for 5 minutes and drain thoroughly.
  • Light the oven grill.
  • Mix in the fried mushrooms onions mixture and courgettes. Arrange them in a baking dish.
  • Whisk cream, salt, egg yolks, pepper powder and curry powder.
  • Pour this over the vegetables and cook under grill for 7 minutes.
  • Courgettes au-gratin is ready. Serve hot.
