  • Heat oil in a pan. Splutter mustard seeds and add curry leaves.
  • Add bitter gourd slices.
  • Sauté for 7-8 minutes over medium flame, stirring occasionally until the bitter-gourd is completely done and slightly browned. 
  • Then add sliced green chilly and onion.
  • Stir fry for 8-10 minutes.
  • Now add the masalas and enough salt.
  • Roast for few more minutes to get rid of the raw smell of masalas. Then switch off the flame.
  • Serve along with steamed rice.
