For preparing brandade, soak the cod over night.
Put the cod in a saucepan and fill it with cold water. Add in pepper powder, parsley, thyme and bay leaf.
Bring it to a boil and cook for 10 minutes.
Heat milk in a vessel until luke warm.
Drain the cod, remove the bones and separate the fish.
Mince the cod fish slowly.
Gradually pour in the milk and olive oil until you obtain a creamy puree.
Add the lemon juice towards the end. Add in salt and pepper if required.
Brandade is ready. Serve with croutons(seasoned cubed bread) fried in oil and steamed cooked potatoes.
