500 g Cod fish (salted and dried)150 ml Milk150 ml Olive oil1 clove Garlic (finely chopped)Pepper powder (As reqd)1 spring Parsley (chopped)1 spring Thyme (chopped)1/2 Bay leaf3 drops Lemon juiceSalt (As reqd) For preparing brandade, soak the cod over night.Put the cod in a saucepan and fill it with cold water. Add in pepper powder, parsley, thyme and bay leaf.Bring it to a boil and cook for 10 minutes.Heat milk in a vessel until luke warm.Drain the cod, remove the bones and separate the fish. Mince the cod fish slowly.Gradually pour in the milk and olive oil until you obtain a creamy puree.Add the lemon juice towards the end. Add in salt and pepper if required.Brandade is ready. Serve with croutons(seasoned cubed bread) fried in oil and steamed cooked potatoes. Others
