  • For preparing brandade, soak the cod over night.
  • Put the cod in a saucepan and fill it with cold water. Add in pepper powder, parsley, thyme and bay leaf.
  • Bring it to a boil and cook for 10 minutes.
  • Heat milk in a vessel until luke warm.
  • Drain the cod, remove the bones and separate the fish.
  • Mince the cod fish slowly.
  • Gradually pour in the milk and olive oil until you obtain a creamy puree.
  • Add the lemon juice towards the end. Add in salt and pepper if required.
  • Brandade is ready. Serve with croutons(seasoned cubed bread) fried in oil and steamed cooked potatoes.
