Creamy Tomato Soup

Ingredients
  

  • 800 g Tomatoes
  • 1 no Onion peeled and chopped
  • 1 clove Garlic peeled and chopped
  • 1 spring Thyme
  • 2 tbsp Fresh cream
  • 10 nos Basil leaves chopped
  • 1/3 litre Hot water
  • 2 tbsp Olive oil
  • Pepper powder As reqd
  • Salt As reqd

Instructions
 

  • For preparing creamy tomato soup, dip the tomatoes in hot water, peel and de-seed them. Chop it and keep it aside.
  • Heat olive oil in a pan. Fry onion and garlic for 2 minutes on low flame.
  • Add the chopped tomatoes, thyme, salt and pepper powder. Pour hot water and mix well. Allow it to cook for 20 minutes.
  • Remove the thyme and pour the soup into a blender and blend it.
  • Return the blend soup into the saucepan and add in the cream. Heat it for 2 minutes.
  • Garnish with basil.
  • Creamy tomato soup is ready. Serve hot.
