For preparing mixed veg paratha, sautT ginger and garlic in ghee.
Add garam masala, chilly powder and salt.
Then add tomatoes and green chillies. Fry well.
Add in onions, coriander leaves, potatoes, capsicum and celery to it. Fry it well. Then allow it to cool and keep it aside.
Mix wheat flour, salt, ghee and water. Knead it into a dough.
Make small sized balls, press it with your hands and make small circles.
Spread the veg mixture on one of the circles and place another circle on top of it. Seal the ends well and roll it.
Heat 2 tbsp of ghee in a frying pan and shallow fry these parathas.
Mixed veg paratha¦s are ready. Serve hot.
