Coconut - Onion Rice

Ingredients
  

  • 2 cups Cooked rice
  • 1/2 cup Coconut grated
  • 2 nos Onion big
  • 3-4 nos Green chillies
  • Curry leaves A few
  • 2 tbsp Urad dal
  • Salt As reqd
  • 2-3 springs Coriander leaves
  • 2 tbsp Coconut oil
  • 1 tsp Mustard
  • 1/2 tsp Cumin seeds Jeerakam
  • 2-3 nos Red chillies chopped in 3 pieces

Instructions
 

  • For preparing coconut-onion rice, soak urad dal in water for 10 minutes and strain extra water.
  • Chop onion, green chillies and coriander leaves.
  • In a kadai, heat coconut oil and fey red chillies, cumin seeds and mustard.
  • When mustard splutters. Add urad dal and sautT for 5-8 minutes.
  • Now add green chillies, onion and curry leaves and sautT.
  • Add grated coconut and sautT for 10 minutes adding salt.
  • Remove from fire, transfer cooked rice to this and mix well.
  • Finally sprinkle chopped coriander leaves over the rice.
  • Coconut-onion rice is ready, Serve with pudina chutney.
