Vishu Kanji - Vishu Special
A tasty porridge made with coconut milk, rice and other ingredients

- 1/2 cup Raw Rice Pachari
- 1/2 cup Parboiled Rice Puzhangalari
- 1/2 cup White beans
- 3 cups Coconut milk
- 1/2 cup Coconut grated
- Salt As reqd
For preparing vishu kanji, first dry roast the white beans and remove the skin.
In a large pot, boil both the rice and white beans with required water and salt.
When the rice is done, add the coconut milk and heat.
When the bubble starts to come from the sides, immediately remove from flame.
Pour the porridge in serving plate and decorate with grated coconut on top of it.
Vishu kanji, a tasty vishu special recipe is ready.
