Pumpkin Delights

Ingredients
  

  • 1/2 kg Ripe pumpkin chopped small
  • 1 cup Jaggery powdered, Shakkara
  • 1 cup Coconut grated
  • 1/2 cup All purpose flour Maida
  • 1/2 cup Wheat flour/Aata
  • 1/2 cup Rice flour
  • 2 tsp Cardamom powdered, Elakka
  • 15-20 nos Cashew nuts chopped finely
  • Food colouring A pinch
  • Salt A pinch
  • Oil As reqd
  • Water As reqd

Instructions
 

  • For preparing pumpkin delights, heat water in a pot. Put in the pumpkin. Boil till it becomes soft and cooked.
  • Drain the water and cool.
  • Grind the pumpkin in a mixer grinder.
  • Take a bowl, add grated coconut, jaggery, cashew nuts and ground pumpkin. Mix well.
  • Take another bowl and add food coloring, cardamom powder, maida, wheat flour, salt and rice flour. Mix well with a little water to make a thick batter avoiding lumps
  • Make balls out of the pumpkin mixture.
  • Heat oil in a pan and dip the pumpkin balls in the thick batter and deep fry it.
  • Fry till they become golden brown in colour.
  • Pumpkin delights are ready to be served.
  • Note:-A very sweet and healthy treat for all ages.
