Sweet And Sour Prawn & Brinjal

Ingredients
  

  • 1 Kg Prawns
  • 250 g Brinjal
  • 2 tsp Red chilly powder
  • 1 no Tamarind Lemon Size
  • 1 no Jaggery Lemon Size, Sharkara
  • 2 cups Onion chopped
  • 1 cup Coconut slices
  • 1 tsp Ginger chopped
  • 10 cloves Garlic
  • 1 tsp Mustard Seeds
  • 6 nos Cloves Grambu
  • 6 nos Cardamom Elakka
  • 1 tsp Poppy Seeds Kashakasha
  • 1 no Cinnamon Karugapatta
  • 1 tsp Turmeric Powder
  • 300 ml Refined oil
  • Salt As Reqd

Instructions
 

  • Peel and wash the prawns. Add turmeric powder and some salt. Mix well and keep aside.
  • Cut the brinjals into pieces and put in water.
  • Take one cup of onion pieces, tamarind, jaggery, cloves, cardamom, poppy seeds, garlic bulbs, ginger piece and cinnamon into a grinding jar and grind into a paste(spicy paste).
  • Take a deep bottomed pan, add oil and heat. Splutter mustard seeds. Add the remaining cup of onion pieces and fry till the pieces are dark brown in color.
  • Add the prawns, red chilly powder and coconut slices. Stir fry until oil shows up.
  • Add the brinjal pieces and the spicy paste and sufficient salt. Mix well and fry for a couple of minutes.
  • Add two cups of water and simmer in medium flame till the contents are cooked well.
  • Serve hot with rice.
