Cut the vegetables in medium size. Cook the yellow split peas with enough water and salt.
Add all the vegetables except tomato and lady finger with sambar powder, add the tamarind water, cook well
In a pan heat oil add the grated cocunut, chana dal, coriander seeds, shallots, 8 dry red chillies, 1/2 tsp fenugreek, curry leaves, saute well till golden brown when aroma comes.
Grind the cocunut to a paste, add this paste to the vegetables.
In another pan splutter mustard seeds in oil, add 2 dry red chillies, curry leaves, 1/2 tsp fenugreek seeds, cumin seeds, asafoetida, chilly powder, turmeric powder and coriander powder. Cook it in a low flame.
Add lady finger stir for few seconds, then add chopped tomato, let it boil, add this to the cooked vegetables
Serve hot.
