Cut the vegetables in medium size. Cook the yellow split peas with enough water and salt.
Add all the vegetables except tomato and lady finger with sambar powder, add the tamarind water, cook well and keep it aside
In another pan splutter mustard seeds in oil, add dry red chillies, curry leaves, fenugreek seeds, cumin seeds, asafoetida, chilly powder, turmeric powder and coriander powder. Cook it in a low flame.
Add lady finger stir for few seconds, then add chopped tomato, let it boil, then add this to the cooked vegetables
Sambar ready.
