Brinjal And Potato Stir Fry

Brinjal and potatoes are cooked with other ingredients to make a tasty side dish

Ingredients
  

  • 6 nos Brinjals Vazhuthananga
  • 2 nos Potatoes
  • Salt As reqd
  • 1 no Onion sliced
  • 2 nos Green chillies chopped
  • Turmeric powder A pinch
  • Curry leaves A few
  • 1/4 tsp Mustard seeds
  • 2 tbsp Oil

Instructions
 

  • For preparing brinjal and potato stir fry, slice the brinjals and potatoes lengthwise.
  • Boil the potatoes in water till it is half cooked. Drain water and keep it aside.
  • Heat oil and crackle mustard seeds. Add the brinjal and boiled potatoes. Saute till it softens a bit.
  • Then add sliced onion, green chillies and turmeric powder. Add about 3 tbsp water. Stir and cover it till the water gets evaporated and the vegetables are cooked.
  • Add salt and curry leaves. SautT for about 3 minutes.
  • Brinjal and potato stir fry is ready.
  • Tip: Keep the cut brinjal in water, so that it does not change colour. You can omit the chillies if you want and add about 1/2 tsp red chilly powder instead. If meant for small children, there is no need to put the chilly at all.
