For preparing brinjal and potato stir fry, slice the brinjals and potatoes lengthwise.
Boil the potatoes in water till it is half cooked. Drain water and keep it aside.
Heat oil and crackle mustard seeds. Add the brinjal and boiled potatoes. Saute till it softens a bit.
Then add sliced onion, green chillies and turmeric powder. Add about 3 tbsp water. Stir and cover it till the water gets evaporated and the vegetables are cooked.
Add salt and curry leaves. SautT for about 3 minutes.
Brinjal and potato stir fry is ready.
Tip: Keep the cut brinjal in water, so that it does not change colour. You can omit the chillies if you want and add about 1/2 tsp red chilly powder instead. If meant for small children, there is no need to put the chilly at all.
