Cut the brinjal on the top side and scoop the inside of brinjal
with a spoon and keep it aside.
In a pan, heat oil and splutter cumin seeds.
Add onion, green chillies and tomatoes.
Into this add ginger-garlic paste, chilly powder, turmeric powder, coriander powder, cumin seed powder and mix well.
Add water if required. Into this, add the scooped brinjal, chicken masala, salt and coriander leaves. Cover it with a lid and cook for 5 minutes in low flame.
Turn off the stove and stuff the prepared masala inside the scooped out brinjals.
In a frying pan, pour little oil and fry the brinjals in low flame till it becomes brown in color.
Serve the stuffed brinjal masala with chappathi/butter naan etc.
