Ingredients
  

  • 5 nos Brinjal
  • 1 no Onion chopped
  • 2 nos Tomato medium size
  • 3 nos Green chillies chopped
  • 1/2 tbsp Cumin seeds Jeerakam
  • 1 tbsp Cumin seed powder
  • 1 tbsp Chilly powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Garam masala powder
  • 1 tbsp Chicken masala powder
  • 1 1/2 tbsp Coriander powder
  • Ginger garlic paste - 1 tbsp
  • Coriander leaves Few
  • Salt As reqd
  • Oil As reqd

Instructions
 

  • Cut the brinjal on the top side and scoop the inside of brinjal with a spoon and keep it aside.
  • In a pan, heat oil and splutter cumin seeds.
  • Add onion, green chillies and tomatoes.
  • Into this add ginger-garlic paste, chilly powder, turmeric powder, coriander powder, cumin seed powder and mix well.
  • Add water if required. Into this, add the scooped brinjal, chicken masala, salt and coriander leaves. Cover it with a lid and cook for 5 minutes in low flame.
  • Turn off the stove and stuff the prepared masala inside the scooped out brinjals.
  • In a frying pan, pour little oil and fry the brinjals in low flame till it becomes brown in color.
  • Serve the stuffed brinjal masala with chappathi/butter naan etc.
