Rasakalan - Brahmin Special

Rasakalan is a delicious and traditional Brahmin special dish with rich creamy gravy. Rasakalan is a combo of a variety of veggies like white gourd, Pumpkin and other vegetables cooked in a coconut mixture and seasoned. In these vegetable we have different in taste and different color . so its very rich in fiber and vitamins. Rasakalan is unique and special with cooked vegetables blended in a coconut mixture and in final stage the seasoning gives more aroma to entire dish . Ingredients
  

  • 100 g White gourd Kumbalanga
  • 100 g Pumpkin Mathanga
  • 100 g Elephant yam Chena
  • 1 no Raw banana
  • 1 tsp Turmeric powder
  • 2 tbsp Chana dal
  • 4 nos Red chillies
  • 3 nos Green chillies
  • 1 tsp Fenugreek Uluva
  • 1 1/2 cup Coconut grated
  • 1/2 cup Slightly soured butter milk
  • 1 tsp Mustard seeds
  • 2 tsp Coconut oil
  • 1 piece Jaggery
  • Salt As reqd

Instructions
 

  • For preparing rasakalan - brahmin special, cut and wash white gourd, pumpkin, elephant yam and raw banana. Boil with sufficient quantity of water. Add turmeric powder and salt.
  • Fry channa dal, red chillies(3 numbers) and fenugreek(1/2 tsp) with coconut oil and grind the fried items with grated coconut and green chilly.
  • Add the ground mixture to the first step and boil for a few minutes.
  • Add jaggery.
  • Add slightly soured butter milk and as it starts foaming a bit, stop cooking. Care should be taken that it should not be boiled.
  • Fry mustard seeds, fenugreek (balance 1/2 tsp) and red chilly (one number) and add this to the mixture.
  • Add curry leaves.
  • Rasakalan - brahmin special recipe, is ready. Serve with rice.
