Healthy Tomato Salad

Ingredients
  

  • 1 cup Tomato chopped
  • 1 tbsp Peanut powder
  • 1 tsp Coconut grated
  • 1 tsp Garlic chopped
  • 1/2 tbsp Coriander leaves chopped
  • Cumin seeds A pinch, Jeerakam
  • Mustard seeds A pinch
  • 1 no Red chilly cut into pieces
  • Curry leaves A sprig
  • Sugar A pinch
  • 1 tbsp Vinegar
  • Oil As reqd
  • Salt As reqd

Instructions
 

  • Mix together grated coconut, peanut powder, vinegar, garlic, coriander leaves, sugar and salt together in a mixing bowl. Keep aside for a few minutes.
  • Chop the tomatoes in cubes. Add the above mixture into tomatoes. Heat oil in a pan and splutter mustard and add cumin seeds and red chilly.
  • Add curry leaves and turn off the fire.
  • Add above seasoning to the tomato mixture when it cools and serve.
  • Healthy tomato salad, a favorite with kids as well as elders, is ready.
