Healthy Tomato Salad
Tomato, grated coconut and other ingredients are mixed and seasoned

- 1 cup Tomato chopped
- 1 tbsp Peanut powder
- 1 tsp Coconut grated
- 1 tsp Garlic chopped
- 1/2 tbsp Coriander leaves chopped
- Cumin seeds A pinch, Jeerakam
- Mustard seeds A pinch
- 1 no Red chilly cut into pieces
- Curry leaves A sprig
- Sugar A pinch
- 1 tbsp Vinegar
- Oil As reqd
- Salt As reqd
Mix together grated coconut, peanut powder, vinegar, garlic, coriander leaves, sugar and salt together in a mixing bowl. Keep aside for a few minutes.
Chop the tomatoes in cubes. Add the above mixture into tomatoes. Heat oil in a pan and splutter mustard and add cumin seeds and red chilly.
Add curry leaves and turn off the fire.
Add above seasoning to the tomato mixture when it cools and serve.
Healthy tomato salad, a favorite with kids as well as elders, is ready.
