Baked Pumpkin Cake
Pumpkin, sugar, eggs and other ingredients are cooked together and baked

- 1 3/4 cup All purpose flour Maida
- 250 gms Pumpkin
- 2 nos Eggs
- 1 1/4 cup Sugar
- 3/4 cup Shortening
- 1 tsp Baking powder
- 1/4 tsp Cloves powdered
- 1/4 tsp Cinnamon powdered
- 1/2 cup Raisins chopped
- 1/2 cup Cashew chopped
- 1/2 cup Almonds chopped
- 3/4 cup Water
- Salt As reqd
- 1 tsp Vanilla essence
- 1/2 tsp Orange color
- 1 cup Ready made cream
For preparing baked pumpkin bread, beat pumpkin, water and egg together till fluffy. Keep aside.
Blend shortening and sugar, vanilla essence, color till smooth. Add the pumpkin mixture and mix well.
Now stir in all the other ingredients: maida flour, baking powder, cloves powder, cinnamon powder, raisins, nuts and required salt. Combine well.
Beat the cream into smooth paste. Keep aside.
Pour the mixture into a greased baking tray and cook for 40 minutes in 350 degrees.
Spread the cream over the baked pumpkin cake, a tasty tea time snack, is ready.
