Healthy Cucumber Salad Easy

Soaked moong dal, cucumber and other ringredients are tossed together

Ingredients
  

  • 1/4 cup Moong dal soaked and boiled, cherupayar parippu
  • 1 no Cucumber peeled and chopped
  • 1/2 cup Carrot grated
  • 1/2 cup Beetroot grated
  • 1/4 tsp Mustard seeds
  • Asafoetida A pinch, Kayam
  • 1 tbsp Coriander leaves chopped
  • 1 tbsp Coconut grated
  • 1 cup Yogurt
  • 1/2 tsp Lemon juice
  • 1/2 tsp Ghee
  • 1 sprig Curry leaves
  • Salt As reqd

Instructions
 

  • For preparing healthy cucumber salad, combine together lemon juice, coriander leaves, carrot, beetroot, cucumber, yogurt and salt. Add soaked and boiled moong dal.
  • Melt ghee in a pan and add mustard seeds and curry leaves.
  • Pour this into the cucumber mixture and garnish with grated coconut.
  • Healthy cucumber salad is ready.
