Soaked moong dal,
cucumber
and other ringredients are tossed together

soaked and boiled, cherupayar parippu

Cucumber
peeled and chopped

Carrot
grated

Beetroot
grated

Mustard seeds
Asafoetida
A pinch, Kayam

tbsp
Coriander leaves
chopped
1
tbsp
Coconut
grated
1
cup
Yogurt
1/2
tsp
Lemon juice
1/2
tsp
Ghee
1
sprig
Curry leaves
Salt
As reqd
Instructions
For preparing healthy
cucumber
salad, combine together lemon juice, coriander leaves,
carrot
,
beetroot
,
cucumber
, yogurt and
salt
. Add soaked and boiled moong dal.
Melt
ghee
in a pan and add
mustard seeds
and
curry leaves
.
Pour this into the
cucumber
mixture and garnish with grated
coconut
.
Healthy
cucumber
salad is ready.
