Koottukari - Brahmin Special

Ingredients
  

  • 1/4 kg Ash Gourd/White Gourd Kumbalanga
  • 1/4 kg Elephant yam Chena
  • 1 cup Chana dal Kadala parippu
  • 1 tsp Turmeric powder
  • 1 tsp Cumin seeds Jeerakam
  • 3 nos Red chillies
  • 1 1/2 cup Coconut grated
  • 2 tbsp Coconut oil
  • 1 tsp Urad dal Uzhunnu parippu
  • 1 tsp Mustard seeds
  • 1 piece Jaggery Sharkara
  • 3 tsp Salt

Instructions
 

  • For prepraring kootukari - brahmin special, wash kumbalnga, elephant yam and chana dal and boil it in the cooker with sufficient quantity of water take about 2 cups of water so that the vegetables are immersed in water). Add turmeric and salt to this.
  • Grind the grated coconut 1 cup with jeerakam and red chillies adding some water.
  • Add the cooked vegetables to the ground coconut mixture and allow to boil for a few minutes. Then add jaggery.
  • Fry mustard seeds and urad dal in coconut oil. Add the remaining 1/2 cup grated coconut and keep frying till it becomes brownish in color.
  • Stir in the fried ingredients into the cooked vegetable mixture. Add curry leaves.
  • Koottukari - brahmin special recipe, is ready. Serve hot.
