Crispy Bittergourd
Bittergourd pieces sauted with onion, garlic, other ingredients and fried crisp

- 1 no Bittergourd/Karela finely chopped
- 3 cloves Garlic crushed
- 1 no Onion chopped
- Turmeric powder A pinch
- 1 tsp Red chilly powder
- 2 tbsp Oil
- Salt As reqd
- Curry leaves Few
Mix bittergourd pieces with salt, turmeric, chilly powder and keep aside for 5 minutes.
Fry garlic and onion in hot oil for 2 minutes. Squeeze out the juice of bittergourd and stir bittergourd pieces into the pan.
Fry well stirring occasionally. Add curry leaves.
Fry the bittergourd to a crispy state and remove from fire.
Crispy bittergourd, a healthy dish apt for the diabetic, is ready. Serve hot.
