Carrot Cake - Delicious

Carrot cake made in pressure cooker

Ingredients
  

  • 1 1/4 cup Carrot grated
  • 1 1/4 cup Wheat flour
  • 3/4 cup Refined oil
  • 3/4 tsp Baking powder
  • 3 nos Eggs
  • 1 1/4 cup Sugar powdered
  • 1/2 tsp Baking soda
  • Cinnamon A pinch, powdered
  • Clove A pinch, powdered
  • 1/4 cup Caramelized sugar

Instructions
 

  • Mix together powdered sugar and oil.
  • Beat in a blender and add eggs and beat until frothy.
  • Add grated carrot and continue whipping.
  • Meanwhile sift together wheat flour with baking powder, cinnamon and clove powder. Add the maida flour to the above mixture and mix well.
  • Add caramelized sugar and mix together until smooth.
  • Pour the cake mixture into a greased tray and cook/bake in a cooker/oven for 45 minutes or until done.
  • Note: 1)Do not use weight washer or safety valve while cooker is used. Cook in medium flame.
