Potato and rice - Potato Rice

Ingredients
  

  • 3 nos Potato cut into medium cubes
  • 1 1/2 glass Rice washed and drained, white rice/basmati rice
  • 3 glasses Water
  • 3 nos Onion chopped
  • 1 handful Curry leaves
  • 1/2 tsp Turmeric powder
  • 1 tsp Chilly powder
  • Asafoetida powder A pinch, kayam podi
  • Salt As reqd
  • Mustard seeds A pinch, kaduku

Instructions
 

  • Pour water in a vessel and add cleaned rice.
  • Cover with a lid and cook for 10 minutes in light medium flame until done. Keep the cooked rice aside.
  • Heat oil in a pan and crackle mustard seeds. When mustard crackles, add onion and curry leaves. Saute for sometime in low heat. 4)Add potato cubes, little water for boiling potatoes and required salt. 5)When the potato cubes are cooked, add turmeric powder, chilly powder and asafoetida powder.
  • Simmer until water dries up completely.
  • Stir in cooked rice and mix well.
