Pressure cook red gram, garlic, 1 onion, 1 tomato, chiily powder, turmeric powder & asafoetida together with required water. After it is cooked, cool it & smash it. Keep it aside.
Heat little oil in a kadai and fry ingredients: dry red chillies, coriander seeds, bengal gram, fenugreek, cumin seeds, cinnamon and grated coconut. Cool it and grind it with tamarind(if needed add water while grinding).
Splutter mustard seeds and then add 1 onion(chopped) and 1 tomato(chopped). Cook till raw smell goes.
Now mix cooked dhal with garlic and required salt. Add water according to thickness you prefer. Let it boil for 5 to 7 minutes.
Add jaggery to it and let it cook for 1 min..
Hot sambar is ready. Serve with idly, dosa, vadi etc.
