Malabar Neichoru

Ghee rice or neichoru is a popular muslim dish for ceremonies and weddings

Ingredients
  

  • 500 gms Basmati rice
  • 1 no Onion sliced
  • 1 inch Cinnamon Karugapatta
  • 3 nos Cloves Grambu
  • 3 pods Cardamon
  • 1 litre Water
  • 1 tbsp Ghee
  • 1 1/2 tbsp Coconut oil
  • 1 no Onion finely sliced
  • Salt As reqd

for garnishing:

  • Cashew nuts Few
  • Raisins Few, Onakka munthiri

Instructions
 

  • Wash basmati rice and drain well.
  • Take a pan and pour ghee. Splutter cinnamon, cloves and cardamom.
  • Add onion and fry crisp.
  • Add the drained basmati rice and fry for 5 minutes.
  • Add boiling water and required salt.
  • Cover with a lid and cook in low heat until done.
  • Stir gently and wait till the water has evaporated completely.
  • Take a pan and pour coconut oil. Fry the onion, cashew nuts and raisins. Scatter on top of malabar neichoru.
