Easy Brinjal Fry
Round brinjal slices coated with chilly masala and shallow fried

- 200 g Brinjal Vazhuthananga
- 1 tsp Chilly powder
- 1 tsp Pepper powder
- 1 tsp All purpose flour Maida
- 1 dsp Garlic
- 1 dsp Shallots Kunjulli
- 1 dsp Vinegar
- Salt As reqd
- Oil for frying
Slice the brinjal into thick rounds and leave in salted water for a few minutes. Drain and dry the brinjal.
Grind the ingredients: chilly powder, pepper, garlic and shallots in vinegar. Mix the masala paste in flour.
Rub the masala paste on both sides of the brinjal slices and marinate for 10 minutes.
Take a pan and pour sufficient oil for frying. Heat the oil and shallow fry both sides of the brinjal till golden in color and crisp.
