  • Slice the brinjal into thick rounds and leave in salted water for a few minutes. Drain and dry the brinjal.
  • Grind the ingredients: chilly powder, pepper, garlic and shallots in vinegar. Mix the masala paste in flour.
  • Rub the masala paste on both sides of the brinjal slices and marinate for 10 minutes.
  • Take a pan and pour sufficient oil for frying. Heat the oil and shallow fry both sides of the brinjal till golden in color and crisp.
