Over ripe bananas
any variety of banana, mashed

Instructions
Preheat oven to 160c. Grease an 8 inch cake pan.
Combine flour, salt, baking powder, baking soda and sugar in a large bowl.
In a separate bowl, beat eggs. Add melted butter, sour cream, mashed banana and vanilla.
Stir with a spoon till well combined.
Make a well in the centre of the flour mixture. Pour the wet ingredients into it and mix with a spoon till thoroughly combined.
Spoon the mixture into the prepared pan and bake for an hour until risen and golden brown.
