Squeeze the tamarind pulp in 2 cups water. Sieve the tamarind water and pour into an earthen pot.
Heat the earthen pot and boil the tamarind water.
Add turmeric powder, coriander powder and required salt to the tamarind mixture and boil. Keep this aside.
Take a frying pan and pour oil. Heat the oil and splutter mustard seeds and cummin seeds.
Add the chopped shallots, chopped ginger, curry leaves and green chillies. Saute for sometime till the shallots are golden in color.
Add sliced dates and chilly powder and saute in low heat.
Add the dates mixture to the previously prepared tamarind mixture.
Stir in low heat until oil accumulates on top.
Add jaggery as required and boil the theeyal.
Dates theeyal is ready and serve hot.
