Malabar Kaipola
Kaipola is a tea time snack with the main ingredient as banana. Apt for festival occasions.

- 1 no Banana cut into cubes, ripe
- 3 nos Eggs
- 1 1/2 tbsp Cashew nuts broken
- 1 tbsp Raisins
- 1/4 cup Sugar
- 2 pods Cardamom powdered
- 1 tbsp Ghee
- Coconut oil As reqd for frying
Take a frying pan and pour coconut oil. Heat the pan and fry cashew nuts and raisins till golden.
Fry the banana cubes in the same coconut oil.
Mix the fried banana cubes, cashew nuts and raisins.
Beat the eggs and add sugar and beat again until frothy.
Smear some ghee in a baking tray and pour a portion of the egg mixture.
Add the banana mixture and pour the remaining egg mixture on top.
Sprinkle cardamom powder on top and bake in an oven for 20 minutes.
Malabar kaipola is ready and enjoy
