Vegetable Rava Upma

Vegetable Rava Upma also known as the sooji upma is loaded with vegetables, it makes a great start your mornings. It is a traditional south Indian breakfast dish that is made from semolina and cooked along with vegetables and seasonings. It is a thick, savory porridge, that can be made under 30 minutes, wholesome, nourishing, and fulfilling. This dish is popularly called as Khara Bath in Karnataka. This Sumptuous and easy upma can also be served as a snack anytime during the day. This recipe we have made healthier by adding boiled vegetables to it. Upma is an Indian word for ‘savory porridge.’ It can be prepared with any combination of vegetables, whole-grain or vermicelli. Adding seasonal vegetables such as onions, tomatoes, carrots, beans, peas or even sweet corn lends a great taste to the traditional South Indian rava upma. What makes such great about this recipe is it does not require much pre preparation , easily done with available ingredients. This is a protein rich healthy breakfast and low in calories. This upma is made by lightly roasting suji and tossing it with mixed veggies and water on medium flame till done. Ingredients
  

  • 2 cups Sooji rava
  • 3 cups Water
  • 1 no Onion chopped lengthwise
  • 1 no Carrot chopped and steamed
  • 5 nos Beans chopped and steamed
  • 2 nos Green chillies slit lengthwise
  • 1 sprig Curry leaves chopped
  • 1/2 inch Ginger chopped finely
  • Coriander leaves roughly chopped
  • 1 tsp Mustard seeds
  • 2 tsp Split Black gram urad dhal
  • 1/4 tsp Turmeric powder
  • 1 tsp Ghee
  • 1 tsp Oil

Instructions
 

  • Dry roast rava until the color starts changing and spread it in a news paper to cool.
  • Heat ghee and oil in a wok.
  • Add mustard seeds. Once they crackle add urad dhal followed by onion, green chilies, curry leaves and ginger.
  • When the onions become translucent add water, steamed veggies, turmeric powder and salt to taste.
  • When the water starts to boil add the roasted rava, stirring continuously to make sure there are no lumps formed.
  • Keep it closed and simmer for 2 minutes.
  • Now stir well and add the coriander leaves.
  • Serve hot with sambar/chutney/curd.
