Button Mushroom Thoran

Fresh mushroom stir fried in spiced coconut.

Ingredients
  

  • 1 punnet Button Mushroom a small light basket or container
  • 1 no Onion chopped fine, medium
  • 1 tsp Ginger shredded
  • 2 nos Green chillies sliced thinly
  • 1 sprig Curry leaves sliced thinly
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Cumin powder
  • 2 tsp Coriander powder
  • 1/2 tsp Garam masala
  • 3 tbsp Coconut shredded
  • 1/2 tsp Mustard seeds

Instructions
 

  • Slice the mushrooms into medium pieces.
  • Heat oil in a pan and temper the mustard seeds. Add onions, ginger, curry leaves and green chillies. Saute till the onions are translucent.
  • Stir in mushrooms and cook in medium heat for about 4 minutes.
  • Add the turmeric, coriander, cumin, shredded coconut and garam masala powder.
  • Keep stirring till the masalas are fragrant and blended with the mushrooms.
  • Close the pan with a lid for 2 minutes or till the mushrooms are tender. :- There should be enough moisture in the mushroom. If not lower the flame.
  • Remove from heat and serve hot.
