Soak basmati rice in some water and keep aside. Drain nicely after 15 minutes. Heat ghee in a pressure cooker.
Add rice and fry till rice starts changing color. Remove from fire and keep this aside.
Boil 2 cups water and add 1 1/2 tsp salt. Keep aside.
Grind together green chilies, coriander leaves and mint leaves to a course paste and keep aside.
Heat oil in the same pressure cooker and add cardamom, cinnamon sticks and cloves and sautT for a minute.
Add onions and fry till onions turn golden brown.
Add tomato and cook covered till the tomatoes turn pulpy.
Add ginger-garlic paste followed by the ground paste.
Add the chicken pieces and saute for some time. Add bay leaves and required salt.
Add remaining hot water and stir the fried rice into the gravy. Close the cooker lid and cook for 5 minutes.
After the steam settles by itself, open the lid and mix slightly.
Healthy chicken biriyani is ready and serve hot with raitha.
