Masala Omelette
Masala Omelette -lightly spiced with cheese and mushroom

- 2 nos Eggs beaten
- 1/2 Onion chopped fine
- 1 no Tomato cored,seeded and chopped fine
- 1 no Green Chilly sliced finely
- 1/2 tsp Ginger chopped fine
- 4-5 nos Button Mushrooms sliced
- 2 tsp Cheese grated
- 4-5 leaves Curry leaves finely chopped
- 1/4 tsp Black pepper
- Salt As reqd
- Oil for cooking
heat oil in a pan, add onion, ginger,green chillies, curry leaves, tomatoes and mushrooms. Mix well.
Cook on medium heat for about 5 minutes till the vegetables are tender. Add salt and pepper to season.
Heat oil in a flat pan. Add the beaten eggs and swirl the pan so that the egg fills the pan.
Cook till underside is almost golden brown. Flip over and add the vegetable mix and sprinkle cheese over the egg.
When set, fold over and transfer to a serving plate.
Masala omelet is ready and is ideal for breakfast along with bread.
