Baked Mushrooms With Ricotta Cheese
Mushrooms baked with ricotta cheese filling, ideal as a diabetic delight.

- 5 nos Mushrooms large
- 1 tbsp Breadcrumbs oat bread or whole wheat bread, dried
- 1/2 tbsp Parmesan cheese grated
For the mushroom filling:
- 1/4 cup Ricotta cheese
- 1 tbsp Red onion chopped
- 2 nos Tomatoes chopped, soaked in warm water
- 1/2 tbsp Basil chopped
- 1/2 tsp Lemon juice
- 1/2 tbsp Chives chopped
- Black pepper As reqd
Remove the stem part of all mushrooms so as to create a hollow space in the centre.
For preparing the mushroom filling, take a bowl and combine ricotta cheese, onion, tomatoes, basil, lemon juice, chives and pepper.
Take a baking tray and line the inside with baking paper.
Spoon fill the ricotta filling inside each mushroom.
Meanwhile combine grated parmesan cheese and dried bread crumbs. Sprinkle this over the mushrooms.
Place the mushrooms in a preheated oven and bake for 15 minutes or until the top portion turns golden.
Baked mushrooms with ricotta cheese is ready and serve hot.
