Baked Mushrooms With Ricotta Cheese

Mushrooms baked with ricotta cheese filling, ideal as a diabetic delight.

  • 5 nos Mushrooms large
  • 1 tbsp Breadcrumbs oat bread or whole wheat bread, dried
  • 1/2 tbsp Parmesan cheese grated

For the mushroom filling:

  • 1/4 cup Ricotta cheese
  • 1 tbsp Red onion chopped
  • 2 nos Tomatoes chopped, soaked in warm water
  • 1/2 tbsp Basil chopped
  • 1/2 tsp Lemon juice
  • 1/2 tbsp Chives chopped
  • Black pepper As reqd


  • Remove the stem part of all mushrooms so as to create a hollow space in the centre.
  • For preparing the mushroom filling, take a bowl and combine ricotta cheese, onion, tomatoes, basil, lemon juice, chives and pepper.
  • Take a baking tray and line the inside with baking paper.
  • Spoon fill the ricotta filling inside each mushroom.
  • Meanwhile combine grated parmesan cheese and dried bread crumbs. Sprinkle this over the mushrooms.
  • Place the mushrooms in a preheated oven and bake for 15 minutes or until the top portion turns golden.
  • Baked mushrooms with ricotta cheese is ready and serve hot.
