Coconut Pecan Cookies

Ingredients
  

  • 2 1/4 cups All purpose flour Maida
  • 1 cup Butter
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 cup Sugar
  • 1 cup Dessicated Coconut
  • 1 nos Egg
  • 1 1/2 tsp Vanilla essence
  • 1 cup Pecan halves you can use any nuts

Instructions
 

  • Preheat oven to 160 c. Grease a cookie tray.
  • Sift flour and baking powder into a medium bowl. Add coconut and required salt.
  • In a large bowl, beat butter and sugar till pale and creamy.
  • Add the egg yolks and beat until just combined.
  • Stir in the flour mixture with your fingers and mix into a soft dough.ß :- do not knead with palms.
  • Cover the cookie dough in a plastic wrap and chill for 30 minutes.
  • Make balls with 2 tsp of the mixture and flatten it between palms.
  • Press a pecan into the centre of each cookie. :- Brush each cookie with beaten egg(optional).
  • Place them in a cookie tray, about 2 inches apart.
  • Bake for 15-20 minutes or until golden. Set aside to cool completely.
  • When thoroughly cooled, store in a sealed container.ß
