Preheat oven to 160 c. Grease a cookie tray.
Sift flour and baking powder into a medium bowl. Add coconut and required salt.
In a large bowl, beat butter and sugar till pale and creamy.
Add the egg yolks and beat until just combined.
Stir in the flour mixture with your fingers and mix into a soft dough.ß
:- do not knead with palms.
Cover the cookie dough in a plastic wrap and chill for 30 minutes.
Make balls with 2 tsp of the mixture and flatten it between palms.
Press a pecan into the centre of each cookie.
:- Brush each cookie with beaten egg(optional).
Place them in a cookie tray, about 2 inches apart.
Bake for 15-20 minutes or until golden. Set aside to cool completely.
When thoroughly cooled, store in a sealed container.ß
