Chicken Croquette
Minced chicken, potatoes,corn,carrots and herbs

- 250 gms Chicken minced
- 4 to Potatoes boiled and mashed
- 3/4 cup Frozen corn kernels
- 1/4 cup Carrots chopped fine
- 4 cloves Garlic chopped
- 1 no Onion finely chopped
- 1 tsp White pepper
- 1/2 cup Cilantro chopped fine
- 1/2 tsp Cumin powder
- For coating
- 2 cups Bread crumbs
- 1 cup Plain flour
- 2 nos Eggs whisked
- oil for deep frying
Heat oil in a pan, add the onion and stir fry with the chicken mince.
2)Add salt and pepper to taste and cook till the chicken is done.
Add carrots, corn and cilantro. Leave aside to cool.
Knead the mash potatoes into the chicken mix.
Check for seasoning and shape into rolls.
Roll the croquette in flour first and then dip in beaten eggs and finally coat in bread crumbs.
Heat oil in a frying pan till smoking and fry the croquette till golden brown.
Drain the oil and leave it on kitchen paper.
