Coimbatore Tomato Rice

Spicy Tomatos with onions good for light meal

Ingredients
  

  • 2 glass Rice marinated & cooked, Sona masuri
  • 1 tsp Salt
  • 2 tsp Kashmiri chilli powder Everest
  • 1 tsp Cumin seeds
  • 2 tsp Coriander powder
  • 2 tsp Sakthi or Aachi briyani powder
  • Biriyani leaves few
  • 2 nos White onion chopped
  • 1/2 tin Italian diced Tomatos
  • 4 nos Green chillis chopped
  • 2 tbsp Sunflower oil
  • 1 tsp Ginger garlic paste
  • 1 tsp Poppy seeds
  • 1/2 bunch Coriander leaves chopped

Instructions
 

  • Wash the rice thoroughly in cold tap water till the cloudy part goes off.
  • Then marinate the rice for 1 hour in cold water.
  • Cook the rice in 4 glasses of water in microwave or pressure cooker till gets cooked approx 20 mins. :- Make sure that the rice does not stick.
  • Add sunflower oil cook it in high heat in a non stick pan and add poppy seeds and cumin seeds and briyani leaf, cook till it gets popped up.
  • Add ginger garlic paste cook it till it gets brown and add chopped white onions cook till it gets brown in colour.
  • Add green chilli and Italian diced tomatoes cook it with 2 glasses of water.
  • Add Everest Kashmiri Chilli Powder,salt, coriander powder,Sakthi or aachi briyani powder.
  • Cook the gravy till gets thick and do not burn it. :- Keep the flame in medium heat.
  • Add the rice and mix it with a gravy.Toss the rice when it gets semi dry and then toss it every 5 minutes.
  • Cook till it gets dry and top it with coriander leaves.
  • :-Serve the dish with onion raita!!
