Khade Masale Mutton

Excellent Curry with tandoor roti, or even chappati

Ingredients
  

  • 500 gms Mutton
  • washed well and dried)
  • 3 tbsp Veg oil or ghee
  • 2 nos Onion sliced, medium sized
  • 15-20 cloves Garlic
  • 2 tsp Ginger cut in to thin strips
  • 1 no Bay leaf optional
  • 4 nos Cardamoms
  • 1/2 tsp Whole black peppercorns
  • 6-8 nos Dry red chillies seeded and cut into small bits
  • 1 tsp Cumin seeds
  • 1 tsp Coriander seeds roughly crushed
  • 2-4 Cloves
  • 1" small Cinnamon
  • Salt to taste
  • 3 nos Tomato chopped
  • 1 cup Yogurt beaten smooth
  • Water as reqd

Instructions
 

  • Head oil or ghee in a Khade.
  • Fry the sliced onions till golden brown over medium heat.
  • Add the garlic, ginger and saute for few minutes.
  • Add Bay leaf, Cardmom, whole black pepper, dry red chillies, cumin seeds, coriander leaves and cloves.
  • After a minute, add water and salt.
  • Cover and cook for about 5 minutes.
  • Add the tomatoes and simmer, covered on low heat till soft and mushy.
  • Add meat and yogurt, stir well, cover and cook till tender (medium heat).
  • Stir occasionally and add spoonful or two of hot water if necessary.
  • :- Excellent with rumali or tandoor roti, or even chappati!!!
