Take palak leaves(without the stem), wash it properly and steam cook it for 20 minutes.
Cool the cooked palak leaves and grind it into a fine paste.
Heat oil in a kadai and fry paneer cubes until they attain a light yellow colour.
Drain the fried paneer cubes from the oil and put it into a bowl of hot water.
Keep it in the hot water for sometime and then squeeze it.
:- This will help the paneer cubes to remain soft even after frying.
In the same oil, saute chopped onion and green chillies by adding salt.
When the onion becomes soft, add ginger-garlic paste and fry for 2 minutes.
Now add turmeric powder, chilli powder and cumin powder.
Fry for 2 minutes and add palak paste along with roasted fenugreek powder and garam masala.
Add little water to it and bring it to boil.
Add paneer cubes and keep it in a low flame till the gravy thickens (15 to 20 minutes).
:- Serve hot with roti or plain rice!!!
