For preparing Kerala Style Vegetable Kurma, first heat 2 - 3 tbsp of oil in a fry pan or kadai.
Add chopped onions, green chillies, curry leaves, cloves and cardamom and fry for 2 - 3 minutes on medium flame.
Add ginger and garlic paste and fry for 2 minutes on low flame.
Mix coriander powder with little water and make a paste. Add it to the frying mixture and fry for 3 minutes on medium flame.
Add ground cashewnuts and raisins.
Add mixed vegetables and mix well with the masala.
Pour two cups of water and salt into it.
Cover with a lid and let it cook, approximately 15- 20 minutes.
Stir intermittently.
Add coconut milk and bring it to boil.
Garnish with coriander leaves.
