Kerala Style Vegetable Kurma

Ingredients
  

  • 2 cups Mixed vegetables
  • 2 nos Onion chopped, medium
  • 7 - Green chillies chopped, medium
  • Curry leaves A few
  • 1/2 tsp Ginger paste
  • 1/2 tsp Garlic paste
  • 4 nos Cloves Grambu
  • 3 nos Cardamom Elakka
  • 4 tbsp Coriander powder
  • Salt As reqd
  • 7 nos Cashewnuts grind with little milk and keep aside
  • 1 tbsp Raisins
  • 2 - Oil
  • 2 cups Water
  • 1 1/2 cups Coconut milk
  • Coriander leaves(chopped) for garnishing

Instructions
 

  • For preparing Kerala Style Vegetable Kurma, first heat 2 - 3 tbsp of oil in a fry pan or kadai.
  • Add chopped onions, green chillies, curry leaves, cloves and cardamom and fry for 2 - 3 minutes on medium flame.
  • Add ginger and garlic paste and fry for 2 minutes on low flame.
  • Mix coriander powder with little water and make a paste. Add it to the frying mixture and fry for 3 minutes on medium flame.
  • Add ground cashewnuts and raisins.
  • Add mixed vegetables and mix well with the masala.
  • Pour two cups of water and salt into it.
  • Cover with a lid and let it cook, approximately 15- 20 minutes.
  • Stir intermittently.
  • Add coconut milk and bring it to boil.
  • Garnish with coriander leaves.
  • :- It`s a medium thick gravy preparation.
  • :- Serve Kerala Style Vegetable Kurma hot with chappathis/rotis.
