Kerala Style Vegetable Stew

Vegetables Cooked In Coconut Milk

Ingredients
  

  • 2 nos Potato diced
  • 1/2 cup Green peas
  • 1 no Carrot diced
  • 1 no Onion diced
  • 5 nos Shallots diced
  • 5 nos Green chilly
  • 1 inch Ginger
  • 2 cups First coconut milk
  • 1 cup Second coconut mik
  • 1 tbsp Coconut oil
  • 1 tsp Black pepper powder
  • 1 stem Curry leaves
  • Salt to taste

Instructions
 

  • Pressure cook all the vegetables,ginger,green chillies and salt in second coconut milk.
  • Add the first coconut milk and simmer for 2 min.
  • :-Do not boil as the milk would curdle.
  • Switch off the flame.
  • Add coconut oil followed by black pepper powder.
  • Garnish with curry leaves.
  • :-Serve hot with appams/idiyappams.
