Cut the melon into biteable sizes, not too small, not too big, just about say that would hold a fork, or a large tooth pick.

Make the butterscotch syrup by making sugar, water, boil and just when it becomes golden brown, add the two tbsp of butter and mix or whip it constantly. This will turn into a syrup.

Place the melons in desert cups, sprinkle a bit of normal surgar, pour a teaspoon of butterscotch each, and finally add in a scoop of icecream.

Garnishing is your choice, either cherries, or a fruit that will contrast the melon, butterscotch and ice cream (Vanilla preffered). You could add in some pineapple pieces or anything that will contrast with the basic recipe, which is, melon, butter scotch, and the vanilla....that cannot change..other than that..add in your own creativity...

:- Trust me, its almost as heavenly as a banana split, you can make your own variations...but for us, it was HEAVEN !!!
