Kerala Potato Curry

Delicious Curry Good for Chappathis

Ingredients
  

  • 4 nos Potatoes
  • 1 small Carrot optional)(peeled & cubed
  • 1/2 of Onion sliced lenghtwise
  • 1/4 tsp Turmeric powder
  • 4 nos Green chillies slit into half
  • 2 nos Tomatoes chopped small
  • 2 sprigs Curry leaves
  • 1/2 tsp Mustard seeds
  • 2 tsp Oil
  • Salt As reqd
  • 3 cups Water

Instructions
 

  • Peel the potatoes and cut into small cubes.
  • Heat a pressure cooker and pour 3 cups of water into it.
  • Add the potatoes, carrot, sliced onion, slit green chillies, turmeric powder and salt to taste to the pressure cooker.
  • Cover, put the weight and cook for 1 whistle.
  • Once the cooker cools, open and mash the potatoes well.
  • Heat oil in a kadai or pan.
  • Splutter the mustard.
  • Add the tomatoes and the curry leaves.
  • Cook the tomatoes very well.
  • Add the cooked potatoes.
  • Add little water if necessary.
  • Boil and cook for 6 - 8 mins.
  • :- Serve hot with chappatis or rotis.
