4 nos Potatoes1 small Carrot (optional)(peeled & cubed)1/2 of Onion (sliced lenghtwise)1/4 tsp Turmeric powder4 nos Green chillies (slit into half)2 nos Tomatoes (chopped small)2 sprigs Curry leaves1/2 tsp Mustard seeds2 tsp OilSalt (As reqd)3 cups Water Peel the potatoes and cut into small cubes.Heat a pressure cooker and pour 3 cups of water into it.Add the potatoes, carrot, sliced onion, slit green chillies, turmeric powder and salt to taste to the pressure cooker.Cover, put the weight and cook for 1 whistle.Once the cooker cools, open and mash the potatoes well.Heat oil in a kadai or pan. Splutter the mustard.Add the tomatoes and the curry leaves. Cook the tomatoes very well.Add the cooked potatoes. Add little water if necessary. Boil and cook for 6 - 8 mins.:- Serve hot with chappatis or rotis. Kerala
