Green Gram (Cherupayar) Burfi
A nutritious sweet made of cherupayar & coconut milk

- 1 cup Green gram dhal Cherupayar parippu
- 1 cup Sugar
- 2 cups Thick coconut milk
- 2 tsp Ghee
- 2 tbsp Cashew nuts
- 1 tbsp Raisins
- 10 nos Cherry fruits
Cook green gram dhal in a pressure cooker adding just enough water(3 whistles will be enough). Drain water & keep it aside.
Add ghee to a frying pan & saute cashews & raisins and keep it aside.
Add cooked gram to the pan & saute for some time keeping on low flame.
Add sugar to it.
Stir continuously until the sugar melts completely & mix well with the gram.
Continuously stirring, add coconut milk & mix well ad remove from flame when the mixture is almost going to condense.
Remove the mixture into a flat bottomed vessel & decorate with cashews, raisins & cherry fruits and keep it for some time under room temperature.
Cut into squares, so that each piece will have one cherry fruit.
