All Vegetable Stew

Multi Vegetable Curry

Ingredients
  

  • 6 nos Egg plant(medium sized) Brinjal
  • 250 gm Potato
  • 2 cups Cucumber pieces
  • 4 nos Carrot
  • 1 no Cauliflower medium
  • 3 nos Radish
  • 2 cups Beans cut into pieces
  • 250 gm Tomato
  • 10 nos Green chilies split
  • 1 cup Onion chopped
  • 1 tsp Cumin powder Jeerakam
  • 1 tsp Coriander powder
  • 3 tbsp Red chilly powder
  • Salt As reqd
  • 200 ml Refined oil
  • 15 nos Garlic pods
  • 1/2 cup Ginger chopped
  • Curry leaves A fistful
  • 1 tbsp Mustard seeds

Instructions
 

  • Cut all the vegetables into medium sized pieces.
  • Heat oil in a pressure pan.
  • Add onion pieces, garlic and ginger pieces, mustard seeds and splutter.
  • Add all the cut vegetables, mix well and add coriander, jeera and red chilly powders.
  • Mix thoroughly and add split green chillies and curry leaves.
  • Add salt and enough water and allow to simmer on low flame until it is fully done.
